Over the weekend I was in search for some sweet treats for the coming weeks that weren’t packed full of sugar or laden with butter.  I came across a recipe for carrot cake on a blog I follow on Facebook.  www.theorganisedhousewife.com.au It was a pretty low sugar butter recipe.

But me being me had to try my best to make it that little bit more nutritious.

Healthier Carrot Cake

1 cup brown sugar
1 cup coconut oil
3 eggs
pinch salt
½ teaspoon bicarb soda
2 cups wholemeal plain flour
2 tsp baking powder
2 cups carrot, finely grated (approx 4 large carrots)
½ cup walnuts, finely chopped
1 teaspoon cinnamon
1 teaspoon nutmeg
1 tablespoon chia seeds

Cream Cheese Icing
150g icing sugar
50g cream cheese, cubed
25g butter

Preheat oven to 180C.
Grease a round 20cm cake tin.
Beat sugar and oil until combined.
Add 1 egg at a time, continue beating for another 2 minutes.
Add salt, bicarb soda, carrots, flour,baking powder, walnuts and spices & chia seeds.  Mix until all combined.
Spoon mixture into tin and bake for 60-70 minutes or until lightly golden.

For the icing –

Beat the icing sugar and butter together with an electric mixer until well combined.
Add the cream cheese and beat slowly for 1 minute.
Turn the mixer to medium high, beating for a further 4 minutes or until icing is light and fluffy.

Its a delicious moist cake.  Perfect with a cup of tea. or heated up with vanilla bean icecream. mmm

To satisfy my chocolate cravings in the afternoons,that i didn’t feel guilty giving the toddler.  I decided to make my version of ‘Bliss Balls’.  I looked at quite a few recipes and came up with my own.

Raw Cacao Bliss Balls

1 cup dates
1/2 cup walnuts
1/2 cup almonds
1/3 cup raw cacao powder
1/3 cup coconut oil
1/2 cup dessicated coconut
1 tablespoon chia seeds
1 tablespoon sesame seeds
1 pinch of salt

Soak the dates in warm water for 10 mins or until soft.
Meanwhile in the food processor, process nuts, cacao, coconut, oil, chia and sesame seeds until smooth.  Add the dates and salt,  process till smooth again.
Spoon into a bowl and let it sit in the fridge for a few minutes to cool down and become pliable.

When cool, shape with hands into little balls and roll in some more coconut place in a container and store in the fridge.  These can also be frozen for a chocolate hit anytime!
