Last week I invited a friend and her son over for a play date Monday morning, thinking oh yeah I’ll just whip something up in on the weekend……
The weekend came and went. Sunday night I thought to myself. “I’ll just throw something together in the morning no big deal.” Apart from the fact that I forgot to go shopping so had no essential baking ingredients eg: butter or milk.
I thought “I’ll just head over to the bakery and buy a cake or something.” Then the thought of being 36 weeks pregnant and dragging a toddler down the stairs and across the road dawned on me.
A last ditch attempt I had a rummage through the fridge I came across a bag of zucchinis that needed to be used up. The lightbulb went off and I started scouring the web for zucchini loaf recipes.
I found a good one on taste.com.au. I changed a few things added dates as I had some in the cupboard and viola a beautifully fluffy and light hot zucchini loaf came out of the oven just in time for morning tea! It tasted delicious and went down a treat with the toddlers as well.
Another successful baking venture! (I think I’m getting better at this baking thing.) It certainly set the tone for a great week in my house. The pic below is all that’s left on this Tuesday afternoon.
Zucchini & Date Loaf
2 cups of plain flour
4 teaspoons baking powder
1 cup grated zucchini
1/2 cup chopped dates
1 teaspoon cinnamon
1 cup sunflower oil
2/3 cup brown sugar
Preheat your oven to 200 celcius
Line a loaf tin with baking paper
Sift flour and baking soda into a bowl
Add all the other ingredients
Stir lightly to combine
(Don’t beat the heck out of it)
Pour into a tin and bake for around an hour or until a skewer comes out clean
Couldn’t be simpler.
