Life is pretty crazy in my house with a toddler and newborn. Lucky is still have time to whip up some fantastic meals. I made this one last night. A proper winter meal for a proper winter night. A few of my followers have asked me for this recipe so here it is.
2 skinless chicken thighs
Salt/pepper/ corn flour to coat chicken
1/2 onion diced
1 chicken stock cube
1 cup hot water
500g of tomatoes boiled peeled deseeded and chopped (Tomato Puree` Recipe) or 1 can tomatoes
1/2 cup chopped mushrooms
2 handfuls green beans topped and tailed
1 cup pitted olives
Big bunches of chopped basil and parsley
Brown chicken in a pan with a splash of oil. Take out and set aside.
Gently fry the onion and mushrooms in the pan until soft then add stock and water.
Reduce the liquid by 2/3rds add the tomatoes.
Put the chicken back in the pan and turn the heat down to a slow bubble. Add a whole sprig of both parsley and basil at this stage.
Leave it to gently bubble uncovered on stove for about an hour or so. Until the chicken is tender.
Add the beans and olives and leave it for another 1/2 hour or so. Until the beans are cooked to your liking.
Throw in the spinach it will wilt quickly.
Just before serving stir through the chopped basil and parsley.
Serve with whatever you fancy. We had mashed potato last night.
If you are using a slow cooker i would follow the first few steps in a pan then when you add the chicken back into the tomato put it in the slowcooker on low for 6 or so hours. Then half an hour before serving throw in the beans, olives, spinach and herbs.
