These days I find myself searching for ideas to try and keep Mr O entertained indoors quietly, while his infant brother  Mr J sleeps in our way too small apartment.

Cooking is something that I love so I thought Mr O would share my passion. I was right. He absolutely loves beating eggs or sprinkling things into a bowl.  Rolling the “play dough” all whilst standing on his little chair.

Last week we made my chocolate square cookies.  (An oldie but a goodie) recipe below.
As soon as you get over having everything neat and tidy and perfectly rolled cookie balls. It’s really a lot of fun.

Sunday morning while Daddy went surfing we decided to make spinach and ricotta rolls for lunch.

They turned out fantastic.  Some overly seeded but you get that with toddlers.

Chocolate Square Cookies

Chocolate Square Cookies

125g butter room temperature
1/2 cup caster sugar
1/2 cup brown sugar
1 tsp vanilla paste
1 egg lightly beaten
1/3/4 plain flour
2 tsp baking powder
1 tsp sea salt flakes
1 block dark chocolate separated into squares

Beat the butter, sugars and vanilla together until light and fluffy.
Slowly add the egg bit by bit.
Sift in the flour and salt.
Gently stir in the flour and then chocolate squares.

Roll into balls or “snakes” and bake in a moderate 180C oven for around 15 mins or until golden brown.

They are delicious warm when the chocolate is soft.
